Celkov polyfenolick a dominantn flavonoidn antioxidanty v rznch odrdch cibule (Allium cepa L.)
ABSTRAKT: Ve studii byly sledovny polyfenolick antioxidan ltky ve tech odrdch cibule (erven Karmen, lut Vetana a bl Ala) vzhledem k jejich celkovmu obsahu a kvalitativnmu sloen flavonoidnho komplexu. Byl tak sledovn vliv teploty a doby skladovn cibule na obsah tchto ltek. Celkov obsah polyfenol byl stanoven spektrofotometricky s Folin-Ciocalteauovm fenolovm inidlem a jednotliv ltky pomoc HPLC metody za pouit chromatografu WatersTM na kolon Watrex 250 4 mm Sepharon SGX C18 7 m s gradientovou eluc. Nejvy obsah polyfenolickch slouenin byl nalezen v erven odrd Karmen (108 300 mg/kg suiny), nejni obsah v bl odrd Ala (26 445 mg/kg suiny), zatmco lut odrda Vetana obsahovala prmrn mnostv celkovch polyfenolickch ltek (65 210 mg/kg suiny). Byl zjitn nrst celkovch polyfenol bhem skladovn u erven a lut odrdy, zvlt bhem skladovn pi laboratorn teplot (22C). Z flavonoidnch a polyfenolickch slouenin byly nalezeny jako dominantn konstituenty spiraeosid (4- O--D-glukosid kvercetinu), rutin a kvercetin a ti dal neidentifikovan ltky. Byly zjitny vznamn meziodrdov rozdly. Nejvce zastoupenou ltkou byl spiraeosid (32 234 mg/kg suiny u erven odrdy Karmen, 23 283 mg/kg suiny u lut odrdy Vetana a 265 mg/kg suiny u bl odrdy Ala). Obsah rutinu se pohyboval od 15 mg/kg suiny u odrdy Ala do 157 mg/kg suiny u odrdy Karmen a podobn kvercetinu od 1 mg/kg suiny u odrdy Ala do 163 mg/kg suiny u odrdy Karmen. Bhem skladovn byl zjitn nrst flavonoid zvlt pi laboratorn teplot pi srovnn se skladovacmi podmnkami pi ni teplot.
