Drinks Recipes - Spicy Himalayan Tea

Ingredients

15ml/1 tbsp fennel seeds

6 cardamom pods

12 cloves

1 cinnamon stick

5mm/1/4 in ginger root, chopped

2.5ml/1/2 tsp black peppercorns

2 bay leaves

90ml/6 tbsp soft light brown sugar

1.5l/2 1/2 pts water

30ml/2 tbsp Darjeeling tea

250ml/8 fl oz milk

Method:

Place all the ingredients except the tea and milk in a pan and bring to the boil.
Cover and simmer for 20 minutes.

Remove from the heat, stir in the tea and leave to infuse for 10 minutes.

Add the milk, return to the boil then strain and serve immediately.
