We are confident that this is a feasible and attractive new menu option for students.
The addition of gluten-free bagels would open up our service to many patrons with dietary restrictions The unused prep space in The Brew could be used to prepare gluten-free products without contamination; The Brews operations are also less diverse than those of main Common Ground, minimizing the potential for errors Alternative dietary accommodations such as nut-free, kosher, or halal would require separate uncontaminated prep and storage spaces; this would necessitate costly infrastructure updates such as: 1. The addition of new, designated prep space 2. Industrial freezers and refrigerators for inventory 3. A separate dishwasher for cutlery and prep equipment The number of menu items offered at CoGro already presents a challenge in staff training; we need to ensure that new product offerings dont result in diminished service In the case of dietary restrictions such as nut allergies, any mistakes can be very costly; while we would like to serve as diverse a customer base as possible, it is fundamentally important that we not compromise our students health
