Grilled Skirt Steak with Citrus 4 servings 1/2 cup sweet paprika 3 3/4 tsp minced dried garlic

1 tbsp kosher salt 2/14 tsp cracked black pepper 2 1/4 tsp onion powder 1 1/2 tsp ancho chili powder 3/4 tsp aji (or any hihg quality, pure red chili powder) 4 (8-oz) pieces outside skirt steak 1/4-1/2 cup peanut oil Kosher salt Cracked black pepper 2 limes, halved Garnish: lime wedges; clinatro sprigs 1. Preheat grill to 450-500 (high) 2. Whisk paprika and next 6 ingredients together; set aside 3. Rub steaks with peanut oil. Sprinkle with salt, pepper and 4 tsp of paprika m ixture. Place on lightly oiled grill rack. Cook over direct heat for 6 minutes, turning once. 4. Remove meat from grill. Squeeze a fresh lime half over each portion. Let stan d 3 minutes. 5. Slice meat diagonally against grain. Garnish if desired and serve.
