Energy Salad

LIke most salads, a powerhouse of nutrients.

Ingredients 1/2 medium cauliflower 4 dates, chopped 1 banana, sliced 1 orange, segmented 2 unpeeled red apples, cut into cubes juice of 1/2 lemon 1/2 teaspoon grated lemon rind 1/2 tablespoon oil 1/2 tablespoon vinegar salt and pepper to taste For the orange dressing 1/2 teacup thick fresh oghurt 4 teaspoons orange juice 1/2 teaspoon mustard powder 1/2 teaspoon powdered sugar a pinch salt Method !or the orange dressing, mi" all the ingredients ver well and chill. #reak the cauliflower into small florests, then steam for $ minutes. %ool. %ombine the oil, vinegar,salt and pepper. 'arinate the cauliflower in this mi"ture. 'i" all the ingredinets in the bowl. %hill. (erve with orange dressing.
