POPE TO HUANCAINA

It is a typical dish and historical Peruvian cuisine, consisting of boiled potato, red pepper cream, milk, oil and cheese. In its classic presentation is accompanied by eggs, olives and lettuce

Ingredients:
1kg potato 400 grms cheese 1 can evaporated milk 1 pack of soda cracker 2 Yellow pepper 1 Garlic 1/4 onion Oil 4 Boiled eggs 8 Olive lettuce leaves

Preparation: Parboil the potatoes, peel and split them into slices when cool down. Fry a little pepper, garlic and onion, let cool. To prepare the cream, pour into blender chili, garlic and onions, a bit of cheese, cookies and milk,
blending start keeping a thick mixture, gradually adding up to finish the rest of the ingredients. To serve place the lettuce leaf, slices of potato, cream and garnish with egg and olive.

duck rice
The duck rice combines this animal with Spanish spices and herbs, and chili and chicha of our lands. The result is one of the best Peruvian dishes

ingredients:
1 kg of rice 6 dams duck 2 carrots 1 cup green peas 1 cup ground coriander 2 cups of stout 1 cup water 1 tablespoon minced garlic 1 tablespoon yellow pepper 2 tablespoons salt 1 teaspoon pepper 1 teaspoon cumin 1/2 bell pepper (cut into strips) 1/2 bell pepper (diced) 1 red onion (diced) 3 or 4 tablespoons oil

Preparation:
Season the duck with salt, pepper and cumin. In a pot put some oil heating. Once the oil is hot add the duck prey. When the duck has released its fat add onion and diced pepper and let brown a little. Then we add the cup of ground coriander, garlic, yellow pepper, salt, pepper and cumin. Add the carrots and peas cook for a few minutes. Add 2 1/2 cups of beer and cup of water and boil Once boiled add the rice and cook When the liquid has dried turn the rice. Top with pepper strips and cook Serve with a rich onion salad.
