Marks Soft Cookie recipe

150g unsalted butter, softened to cup caster sugar or mix brown sugar for soft chewy texture (original recipe 1 cup but to is plenty. 1 egg 2 cups plain flour 1 teaspoon baking powder Makes approx. 20 cookies add icing sugar mixture, to serve if want or drizzle with melted Chocolate. This is Basic Mix , then mix in :- what you want eg: Lemon Poppyseed cookies 1 tablespoon poppyseeds 1 tablespoon finely grated lemon rind 1 tablespoon lemon juice Vanilla choc chip 1 teaspoon Vanilla essence Choc chips to taste Sesame Poppyseed 1 Tablespoon Poppyseed 1 tablespoon Sesame if mixture goes to wet add tiny bit more Flour if to dry Bit water or oil..

1. Preheat oven to 180C/160C fan-forced. Line 3 baking trays with baking paper. Using an electric mixer, beat butter and sugar until pale and creamy. Add egg. Beat to combine. 2. Sift flour and baking powder over butter mixture. Add poppyseeds, lemon rind and lemon juice or other mix of Ingredients. Stir to combine. Roll level tablespoons of mixture into balls. Place balls, 5cm apart, on prepared trays.

3. Bake, one tray at a time, for 12 to 15 minutes or until light golden. Cool on trays for 5 minutes. Transfer to a
wire rack to cool completely. Dust with icing sugar. Serve.
