Cauliflower Wraps

Yield: 2 wraps
Ingredients
Curry Wraps:
1/2 head cauliflower, cut into florets
2 eggs
1/2 tsp. curry powder
1/4 tsp. salt

Instructions
1. )reheat the o%en to &*+ and line two "a,ing sheets with
parch$ent paper. In a food processor, pulse the
cauliflower florets until they for$ a cru$"-li,e te.ture.
)lace the cru$"les and 1/4 cup water in a saucepan with
a tight fitting lid. Coo, on $ediu$ high heat for /
$inutes, until tender.
2. 0rain the cauliflower in a sie%e, then transfer to a clean
,itchen towel. 1ir$ly s2uee3e any e.cess water fro$ the
cauliflower. In a "owl, stir together the cauliflower and
re$aining ingredients. 1or$ two thin circles on the
parch$ent-lined "a,ing sheets. With a spatula, press
down the 4dough4 so it for$s a thin layer. 5eep the
wraps co$pact--there should "e no parch$ent showing
through the $i.ture in any area of the wrap.
&. 6a,e for a"out 1* $inutes until dry and plia"le. ently
re$o%e to a wire rac, to cool so the "otto$ does not
"eco$e soggy. 7se with light fillings or tear into pieces
and use to scoop up fillings.
