1.. Thu huuch, phun luui vu buu quun:
T khi ra hoa en khi thu hoach qua, mat khoang nam thang. Nhan c
thu hoach khi chn. Sau khi thu hoach, qua khong chn them na. Dau hieu chn

- Do han che ve viec s dung thiet b nen chung toi s dung may ong hoa

- Tien hanh phoi che puree va ng theo ba ty le (ty le theo khoi lng):
ty le 60:40, 50:50, 40:60, cung vi viec khao sat kha nang tao ong san pham
chung toi chon ra ty le co ac tnh cam quan tot nhat.
b} Khuu sut khu nung tuu dung cuu sun phum:
- Cac tac nhan tao gel:
Pectin: nhan la loai trai cay co v ngot, khong co v chua nen san
pham mt ong t nhan cung nen co ac tnh tren. Do o, chung toi chon
pectin loai co ch so DE (Degree of Esterification) <50%, tc la pectin thuoc
nhom LMP (Low Methoxyl Pectin). Loai pectin nay cho phep khao sat kha
nang hnh thanh gel pH rong hn so vi loai HMP (High Methoxyl Pectin).

Qua bang khao sat, chung toi nhan thay:
- Phu gia CMC ca ba ham lng eu khong co tac dung on nh he

- Phu gia pectin tao on nh tot ham lng 0,1%. ieu nay co the la v
