Ingredients

Rawa/Sooji : 1/2 cup


Apple: 1 medium sized (make sure that the apples are not sour)
Sugar:1/2 cup
Ghee:2 tablespoons
Cardomom: 1/2 tsp
Milk: 1 cup
Water:1/2 cup


Procedure
Step1:
Heat 1 tsp of ghee in a heavy bottom pan and roast the rava until a nice aroma
comes out.
Usually this step takes 3-4 min. The color of rava changes to light pink.
Keep the roasted rava aside



Step2:
Peel and chop the apples and blend it to coarse paste.


Step3:
Cook this apple in a low- medium flame for 7 minutes



Step4:
Now add 1 cup of milk and 1/2 cup of water and bring it to a boil


Step6:
Add the roasted rava slowly and stir it continously without forming any lumps



Step7:
Switch off the flame and let the rava get cooked for 2 min


Step8:
Now switch on the flame.Keep it low. Add sugar slowly with constant stirring to avoid
lumps


Step9:
Add ghee and cook the mixture again and stir continously until it comes off the sides
of the pan (It may take 3 - 4 in at this point)
The consistency of the kesari tends to become thick once it is cooled down.So
switch off the flame before it reaches the desired consistency


Step10:
Add powdered cardomom and switch off the flame


Step11:
Garnish with cashews fried in ghee


Serving suggestions
For toddlers ( 1yr to 3 yr)
Do not use any nuts for decoration
Reduce the amount of sugar to 1/4 cup
Can use milk in place of water
For older kidsStep 8: Cook the kesari for a minute or two longer and transfer to a
greased plate. Cut into diamond shapes and serve as a mid morning snack to school



For parties
Cut into fun shapes using cookie cutter
Serve in baking cups to make more attractive
Use fine suji for best results
