SIMPLE SPINACH SOUP

4 cups vegetable broth


1/2 cup chopped chard or kale
1 large carrot, sliced thin
1 and 1/2 cups sliced mushrooms
2 cups fresh baby spinach
In a large pot over medium heat, bring the broth and chard to a boil for 3-5
minutes. Add the carrot and mushrooms. When the carrot is tender, add the
spinach. Stir for about 5 seconds and its done.
Add a tossed salad and some crusty bread with hummus for spreading or olive
oil for dipping. This soup is good for you in SO MANY ways ! Its super easy,
doesnt take a lot of time to prepare or cook, and its budget friendly as well.
