150 g Manitoba flour 150 g durum wheat flour 100 g natural yeast 220 g warm water 1 tbsp olive oil 1 tbsp honey 8 g salt TO FILL THE PIZZA olive oil 250 g peeled tomatoes 1 Mozzarella cheese salt oregano Procedimento Sift in a bowl the two flours collect to the center the yeast melted with honey and part of the water. Start to stir with a fork and with hands fold the external strips inside. Add oil and as much water to obtain a sticky dough, add salt and let the dough rise till it doubles its volume. Grease a baking pan and put the dough inside, sprinkle it with flour so it can be stretched out in the pan. Let the pizza rest for another 1 or 2 hours then add tomatoes, salt, oregano and oil. Put in the oven at 250C and 5 minutes before cooking is completed add mozzarella cheese, complete cooking and serve hot.
