2. O BOSNI I HERCEGOVINI
Bosna i Hercegovina posjeduje veliki potencijal u poljoprivredi i u sektoru prerade hrane zbog
brojnih pogodnih uvjeta kao to su:
preko 1,5 miliona hektara poljoprivrednog zemljita,
odlini klimatski uvjeti kao i plodno tlo, te visoko kvalitetna voda,
veina tla u sebi ne sadrava hemijska gnojiva i nema praksu upotrebe pesticida.
Osim toga, BiH ima dugu tradiciju u ovom sektoru, kao i iskusnu i vjetu radnu snagu. Svi ovi
uvjeti stvaraju sjajno okruenje za proizvodnju raznovrsnih sorti voa i povra, s mogunou
berbe prinosa i plodova i do tri puta godinje.
Proizvodi od voa i povra imaju ogromni trini potencijal koji je identiciran u BiH. Procijenjeno
je da trenutno postoji 14 miliona sadnica ljive, kruke, jabuke i drugog voa, koje se koristi za
izvoz sirovine ili za proizvodnju soka i njegovog pakovanja. S obzirom na dati potencijal organske
proizvodnje i opskrbe istom vodom, lako je razumjeti zato meunarodni distributeri hrane i pia
konstantno ulau u ovaj sektor.
Pogodni klimatski uvjeti
Na jugu zemlje preovladava blaga submediteranska klima, koju karakteriziraju duga i topla ljeta
te blage zime. Vie od 200 sunanih dana i u prosjeku 1400 L/m padavina godinje omoguava
uzgoj skoro svih poljoprivrednih kultura. Dovoljna koliina vode, raspoloive povrine za
poljoprivrednu djelatnost i veliki broj sunanih dana ini jug BiH idealnim mjestom za razvoj
vinograda, voa i povra. Postoje i odlini uvjeti za plasteniku proizvodnju. U centralnom dijelu
BiH vlada planinsko-kontinentalna klima. Ovo su idealni uvjeti za proizvodnju krompira i kupusa
kao i organsku proizvodnju. Na sjeveru zemlje je tipina kontinentalna klima. Zbog raznolike klime
i topograje zemlje, postoje idealni uvjeti za proizvodnju itarica, voa i povra.

2. ABOUT BOSNIA AND HERZEGOVINA
Bosnia and Herzegovina has great potentials in agriculture and food processing sector thanks to
numerous favorable conditions such as:
over 1.5 million hectares of agricultural land;
excellent climate and fertile soil, as well as high quality water;
most soils do not contain chemical fertilizers and there is no practice of using pesticides.
In addition, BH has a long tradition in this sector, as well as experienced and skilled workforce.
All these conditions create an excellent environment for the production of dierent varieties of
fruits and vegetables, with the possibility of harvesting and gathering crop and fruit as many as
three times a year.
Huge market potential for fruit and vegetables products has been identied in BH. It is estimated
that currently there are 14 million seedlings of plums, pears, apples and other fruits, which are
exported as raw materials or used for juice production and its packaging. Considering the given
potential for organic production and clean water supply, it is easy to understand the reasons
why international food and beverage distributors are constantly investing in this sector.
Favourable Climate
A mild sub-Mediterranean climate, characterized by long and warm summers and mild winters
dominates the south of the country. Over 200 sunny days and an average 1400 L/m of rainfall
per year allows for growing almost all crops. Sucient amounts of water, surface available for
agricultural activities and a large number of sunny days a year make the southern part of BH
an ideal place for the development of vineyards, fruit and vegetables. Tere are also excellent
conditions for greenhouse production. Mountainous and continental climate dominates the
central part of BH. Tis oers ideal conditions for the production of potatoes and cabbage, as
well as organic production. On the north of the country there is a typical continental climate.
Given the diverse climate and topography of the country, there are ideal conditions for the
production of cereals, fruits and vegetables.

Organska hrana
Bosna i Hercegovina ima velike povrine ekoloke, nezagaene i obradive zemlje, istih izvora
vode i istog zraka, to predstavlja optimalne uvjete za intenzivnu organsku proizvodnju kako
biljnih tako i ivotinjskih kultura. Dodatne prednosti su relativno niski trokovi radne snage i
rijetka upotreba mineralnih gnojiva te hemikalija za zatitu biljaka u BiH u zadnjih 10 godina.
Svijest o zdravlju i tjelesnom izgledu dovela je do konstantnog rasta potranje za tzv. laganim,
zdravim, funkcionalnim i organskim prehrambenim proizvodima, to uz blizinu najveih
svjetskih trita ini ovaj ekonomski sektor izuzetno privlanim za ulaganja. Istovremeno, trajno
smanjenje broja povrina za uzgoj organske hrane u Evropi ini BiH vodeim potencijalnim
proizvoaem organske hrane na ovom kontinentu.
Organska kontrola (OK) je certikacijsko tijelo u BiH za certikaciju proizvoaa organske hrane
koje je akreditirano od IFOAM-a 2007. godine.
Mogunosti za ulaganje - voe i povre
Prilike za investiranje u sektore proizvodnje voa i povra u BiH odlikuju se mogunou ulaganja
u primarni proizvodni kao i u preraivaki sektor. Bosna i Hercegovina se odlikuje visoko kvalitetnim
voem i povrem koje se moe koristiti kao gotov proizvod, u svjeem stanju, ali i kao sirovina za
nalni proizvod. Godine iskustva u preradi s visoko kolovanim kadrom i iskusnim strunjacima u
primarnoj proizvodnji otvaraju velike mogunosti za potencijalne investitore.
Uzgoj voa i povra ima dugu tradiciju u BiH i predstavlja vanu granu bh. privrede. U prijeratnom
periodu BiH je imala razvijenu industriju prerade voa i povra. Mnoga od ovih postrojenja trebaju
nove i savremene tehnologije. Ovo moe biti ansa za potencijalne investitore koji mogu ostvariti
investiciju u BiH u ovom sektoru kroz privatizaciju postojeeg postrojenja ili jednostavno
investicijom u ledinu.
Investicijom u BiH otvaraju se mogunosti pristupa tritima susjednih drava s kojima BiH
ima potpisan ugovor o slobodnoj bescarinskoj trgovini (CEFTA ugovor). Kroz historiju, BiH je
predstavljala raskrsnicu civilizacija, religija i kultura. Pozicionirana u srcu Balkanskog poluostrva,

Bosnia and Herzegovina has large areas of ecologically sound, unpolluted and fertile land, clean
water sources and clean air, which represent the optimal conditions for intensive organic farming
of plant cultures and animals. Further advantages include relatively low labor costs and the rare
usage of mineral fertilizers and chemicals for plant protection in BH in the last decade.
Awareness about health and physical appearance has led to constant growth in demand for the
so-called light, healthy, functional and organic food products, which, in addition to the
vicinity of the worlds largest markets, make this economic sector extremely attractive for
investment. At the same time, permanent reduction of the number of areas for cultivating
organic food in Europe makes BH a potentially leading producer of organic foods on this continent.
Organic Control (OK) is a certication body in BH for the certication of organic food producers,
accredited by IFOAM in 2007.
Investment Opportunities - fruits and vegetables
Opportunities for investment in fruit and vegetable production sectors in BH are characterized
by the possibility of investment in primary production as well as the processing sector. Bosnia
and Herzegovina is characterized by high-quality fruits and vegetables that can be used as a
nal product, fresh, but also as raw material for the nal product. Years of experience in processing
with highly trained personnel and experienced professionals in primary production create broad
range of opportunities for potential investors.
Growing fruit and vegetables has a long tradition in BH and is an important branch of the
BH economy. Before the war BH has had a developed industry for processing of fruits and
vegetables. Many of these facilities need new and modern technologies. Tis may be a chance
for potential investors to invest in this sector in BH through privatization of existing facilities or
simply an investment in the land.
Investment in BH opens up access to the markets of neighboring countries with which BH has
signed the Central European Free Trade Agreement (CEFTA). Historically, BH represented a

vodei proizvoa kako organske tako i konvencionalne hrane u regionu. Zahvaljujui svojim
prirodnim bogatstvima i razliitim klimatskim tipovima unutar zemlje, neke od poljoprivrednih
kultura mogu se uzgajati i vie puta u toku iste kalendarske godine, to investitoru prua
mogunost bre otplate investicije kao i kontinuiranog snabdijevanja trita sirovinom.
Strani investitori imaju pravo na pogodnosti prilikom ulaganja u BiH kao to su:

producer of both organic and conventional food in the region. Tanks to its natural wealth and
variety of climate types within the country, some of the agricultural crops can be grown several
times duringthesamecalendar year, whichgives theinvestor a possibilitytorepaytheinvestment
faster and continuously supply the markets with raw materials.
When investing in BH, foreign investors have the following benets at their disposal:
tax system favourable for foreign investors;
investment capital is not subject to taxation
(exempted from payment of the customs and the customs investment costs);
free employment of foreign nationals, in line with the Labor and the Immigration Law of BH;
free transfer of income abroad, as result of investment in BH;
protection against nationalization, expropriation, conscation of property or measures of similar
eect.

3. PROIZVODNJA VOA U BOSNI I HERCEGOVINI
U BiH postoje vrlo dobri uvjeti za gajenje drvenastog voa i jagodastih vonih vrsta, to se
uglavnom odnosi na povoljne zemljine, klimatske, komunikacijske i demografske uvjete.
Proizvodnja ljive se u predratnom periodu odvijala na prostorima Majevice, Podrinja, Potkozarja,
Gradaca, Brkog i u drugim krajevima gdje su bile zastupljene sljedee sorte: Poegaa, Stanley,
Rutgeteter, Bilska rana, Kalifornijska plava, Aenka, Julska nena, kao i niz domaih sorti ljiva.
U dananjem vremenu prisutan je trend zamjene starih vonjaka gajenih po ekstenzivnom
sistemu uzgoja s modernim sortama: aanska rodna, aanska najbolja, aanska ljepotica,
Hanifa, Yo-yo, Anerbaher, Top 2000, Toptint i drugim. Kada je rije o proizvodnji jabuke, sve vie
se podiu vonjaci gdje su prisutne moderne evropske sorte: Gila, Breaburn, Fuji, Elstar, Jonagold,
Granny Smith, Golden Delicious, Klou Painders, Arkam, Pinoux, i druge, a jo uvijek su prisutne
Jonathan, Idared, Melrose i niz slatkih i kiselih sorti autohtonog sortimenta. Plantani vonjaci
kruke podiu se po najsavremenijim agropomotehnikim zahtjevima gdje se primjenjuju
savremeni uzgojni sistemi, moderna agropomotehnika, armatura i obavezni sistemi za navodnjavanje
kap po kap i uz novi sortiment kruke Viljamovke, Pakams triumf, ampionka i druge. Jagodasto
voe doivljava ekspanziju posljednjih godina i ponovo se uvode u proizvodnju malina, kupina,
jagoda, ribizla, a u novije vrijeme i borovnica. Ovo su vrlo intenzivne, radno angairane, dohodovne
i izvozno orijentirane vone vrste koje na malim povrinama zapoljavaju veliki broj radne snage
na vlastitim imanjima. Razvojem preraivake industrije, podizanjem manjih i veih rashladnih
kapaciteta stvaraju se uvjeti da BiH postane znaajan proizvoa i izvoznik velikog broja
kontinentalnih i mediteranskih vonih vrsta.
3. FRUIT PRODUCTION IN BOSNIA AND HERZEGOVINA
BH has very good conditions for growing woody fruit and soft fruit species, which are mainly
related to favorable soil and climate, communication and demographic conditions. Plum production
in the prewar period took place in the areas of Majevica Mt., Podrinje, Potkozarje, Gradaac, Brko
and other areas where the following varieties were represented: Poegaa, Stanley, Rutgesteter,
Bilska Rana, Californian Blue, Aenka, Julska Nena, and a number of domestic varieties of plum.
Currently there is a trend of replacing old orchards cultivated under extensive breeding system
with modern varieties: aanska Rodna, aanska Najbolja, aanska Ljepotica, Hanifa, Yo-yo,
Anerbaher, Top 2000, Toptint, and other. When it comes to apple production, there is an increase
in orchards to cultivate modern European varieties: Gila, Breaburn, Fuji, Elstar, Jonagold, Granny
Smith, Golden Delicious, Klou Painders, Arkam, Pinoux, and other, while Jonathan, Idared,
Melrose and a number of sweet and sour varieties of indigenous varieties are still present.
Plantations of pear orchards are set up according to modern agro and pomotechnical requirements
where modern cultivation systems, modern agro and pomo techniques, armatures and mandatory
modern cultivation systems, modern agro and pomo techniques, armatures and mandatory
drip irrigation systems are applied together with a new assortment of Williams, Packhams
triumph, Champion and other pears. Berry fruits are experiencing expansion in recent years and
raspberry, blackberry, strawberry, currant, and recently blueberries, are re-introduced in the
production. Tese are very intense, work-engaging, income and export oriented fruit species
which employ large workforce on their own farms, on small surfaces. With the development of
manufacturing industry and building smaller and larger cooling capacities, the requirements for
BH to become a major producer and exporter of a large number of continental and Mediterranean
fruit species have been met.

Bosna i Hercegovina ima dugu tradiciju u proizvodnji ljive u svjeem ili preraenom stanju.
Na njenom teritoriju je u 2009. godini evidentirano 11.604.612 stabala ljive, s ukupnim prinosom
od cca 155.767 tona , dok je prosjean prinos po stablu cca 13,4 kg.
Najzastupljeniji je sljedei sortiment ljive: Poegaa, Stanley, Rutgeteter, Kalifornijska plava,
Renkloda, Cimerova rana, aanska rodna, aanska ljepotica, aanska najbolja, aanska rana i
niz domaih (autohtonih) ljiva. U okviru oglednih povrina naunih i strunih institucija u ispitivanju
su novostvorene sorte, koje trebaju nai svoje mjesto na sortnoj listi Bosne i Hercegovine, a po
tome i u proizvodnoj praksi.
Najpoznatiji regioni proizvodnje ljive su: Podrinje, Majevica, Potkozarje, Gradaac, Graanica,
Brko, srednja Bosna i drugi.

Bosnia and Herzegovina has a long tradition in the production of plums, both fresh and processed.
A number of 11,604,612 plum trees were recorded in its territory in 2009, with a total yield of
approximately 155,767 tons, while the average yield per tree was about 13.4 kg.
Te following plum varieties are the most common: Poegaa, Stanley, Rutgesteter, Californian
Blue, Renkloda, Cimerova Rana, aanska Rodna, aanska Ljepotica, aanska Najbolja, aanska
Rana, and a number of local (indigenous) plums. Newly developed varieties are being studied in the
experimental areasofscienticandprofessional institutions, andthesevarietiesshouldndtheirplace
ontheVarietylist of BosniaandHerzegovina, andsubsequentlyintheproductionpracticeaswell.
Te most famous plum production regions include Podrinje, Majevica Mt., Potkozarje, Gradaac,
Graanica, Brko, central Bosnia and other.
Plum is sold on the domestic and international markets in various forms: fresh, as marmalade,
jam, compote, as well as dried, frozen, and in the form of alcoholic beverages.

Jabuka je druga najrairenija vona kultura po zastupljenosti odmah iza ljive i ima vanu ulogu
u ukupnoj voarskoj proizvodnji u Bosni i Hercegovini. Proizvodnja u voarstvu se modernizira,
podiu se nove plantae u kojima se sadi novi sortiment i primjenjuje savremena agrotehnika,
zatita i navodnjavanje. Jabuka se gaji irom Bosne i Hercegovine bez specinosti za odreeni
region. Broj rodnih stabala jabuke u 2009. godini bio je cca 4.610.256, uz ukupan prinos od 71.507
tona, i prosjean prinos po stablu od 15,5 kg. Od sorti koje se gaje u Bosni i Hercegovini treba
istai: Zlatni i Crveni delies, Melrose, Jonatan, Jonagold, Idared, Granny Smith, Gala, Fuji, Breaburn,
Akane, Boskop, Elstar i dr. Od domaih sorti spominjemo samo neke: Budimka, Kolaara, Staklara,
Bukovija, Senabija, ulabija, arenika, eerlama, Elifana itd. U Bosni i Hercegovini je ouvan
znaajan broj autohtonih sorti koje vode porijeklo iz vremena Turske carevine i vremena Austro-
ugarske, to je znaajan potencijal za pokretanje ozbiljne proizvodnje organskog voa, jer su ove
sorte otpornije na bolesti i tetoine od modernih. Stanovnitvo tradicionalno proizvodi domai
pekmez, slatko, suenu jabuku, te spravlja mnoge druge proizvode na bazi domae sirovine bilo
slatkih ili kiselih jabuka. Na tritu se plasira jabuka uglavnom u svjeem stanju, neto malo kao
suena, te mali procent kao koncentrat, sok, sire i alkoholna pia.

Apple is the second most widespread fruit crop, right after plum, and plays an important role in
the total fruit production in Bosnia and Herzegovina. Production of this fruit is being modernized,
new plantations are raised and new varieties are planted, where modern agricultural practices,
conservationandirrigationarebeingapplied. Apples aregrownthroughout BosniaandHerzegovina
without the specics related to a certain region. Number of yielding apple trees in 2009 was
approximately 4,610,256, with an overall yield of 71,507 tons and the average yield per tree of
15.5 kg. Of the varieties grown in Bosnia and Herzegovina the following should be noted: Golden
and Red Delicious, Melrose, Jonathan, Jonagold, Idared, Granny Smith, Gala, Fuji, Breaburn, Akane,
Boskop, Elstar, etc. To mention but a few of the indigenous varieties: Budimka, Kolaara, Staklara,
Bukovija, Senabija, ulabija, arenika, eerlama, Elifana, etc. A signicant number of indigenous
varieties that originate from the times of the Ottoman Empire and Austro-Hungary are maintained
in Bosnia and Herzegovina, and this represent a signicant potential for starting a considerable
production of organic fruit for these varieties are more resistant to pests and diseases than the
modern ones. Te population traditionally produces home-made jam, sweets, dried apples, and
prepares many other products based on domestic raw materials - either sweet or sour apples.
Mainlyfreshapples, but alsoasmaller number of driedandasmall percentageof appleconcentrate,
juice, vinegar and alcoholic beverages are placed on the market.

U odnosu na ljivu i jabuku kruka je neto manje zastupljena, ali vrlo vana vona vrsta u Bosni
i Hercegovini. Plasira se na trite u vidu svjeih plodova. Proizvodnja kruke odvija se na istim
prostorima gdje i jabuka, jer su prirodni uvjeti u kojima ove dvije kulture uspijevaju slini. Takoe

Na prostoru Bosne i Hercegovine egzistiraju sljedei sortimenti kruaka: Viljamovka, Kaluerka,
Butira, Santa Maria, Junsko zlato, ampionka, General Leklerk, Klero, Pakams triumf i dr.
Proizvodi od kruke uglavnom se plasiraju na domae i strano trite u vidu svjeih plodova,
preraevina i uvene rakije Viljamovke.

Compared to plum and apple, pear is somewhat less prevalent but still a very important fruit
species in Bosnia and Herzegovina. It is placed on the market in the form of fresh fruit. Pear and
apple are produced on the same surfaces given the similar natural conditions in which these two
cultures are grown. Also, as with apple, a large number of old indigenous varieties of pears are
present, and the population uses it for various types of products.
In 2009, there were 1,928,605 pear trees in Bosnia and Herzegovina, with a total yield of 24,784

Proizvodnja vinje se u kontinentalnom dijelu Bosne i Hercegovine uglavnom odnosi na gajenje
sorte Oblainska, koja je veoma traena u izvozu. U Hercegovini se zbog drugaije klime uzgaja
sorta Maraska koja slui za spravljanje poznatog pia Maraskino, a u konditorskoj industriji se
koristi za okoladne bombone.
Broj rodnih stabala vinje prema statistikim podacima za 2009. godinu bio je cca 454.897,
ukupan prinos cca 3.803 tone, uz prosjean prinos po stablu od cca 8,4 kg.
Problemi koji optereuju proizvodnju trenje i vinje najizraeniji su u velikom ueu radne snage
i skupoj berbi plodova. U posljednje vrijeme se u proizvodnju vinje uvodi mehanizirana berba, to
znatno utjee na rentabilnost gajenja.

Navedene jagodaste vrste sve vie nalaze mjesto u proizvodnji voa na prostoru Bosne i
Hercegovine, posebnoizrazlogatoseradi okulturamakojesuradnointenzivne, visokodohodovne,
izvozno orijentirane i to se proizvodnjom na vlastitom imanju angaira cijela porodica.
Prema podacima iz 2009. godine, proizvodnja jagode odvijala se na 4.193 ha, s ukupnim prinosom
od 19.107 t. Prosjean prinos po hektaru je skroman i iznosi oko 4,6 t na otvorenom polju, dok se
u plastenikoj proizvodnji postie prinos od 35 do 40 t/ha.
Sorte jagode koje se gaje u Bosni i Hercegovini su: Clery, Marmolada, Senga Sengana, Pajero, Arosa,
Madalena, Miss, Raurica, Maya i td. Jagoda se koristi za svjeu potronju i za razne preraevine, te
za zamrzavanje. Pored industrijske prerade, jagoda se dosta koristi u domainstvima za spravljanje
raznih domaih proizvoda.
Pored proizvodnje, u naim krajevima je rairena i berba divlje (umske) jagode koja u izvozu
postie veoma visoke cijene uglavnom kao zamrznuta roba.

Tis type of berry is becoming increasingly common in the fruit production in Bosnia and
Herzegovina, particularly because it is a labor intensive, high income, export-oriented fruit
culture and a whole family can be engaged in its production on their own farm.
According to data from 2009, production of strawberries was carried out on 4,193 ha, with a
total yield of 19,107 tons. Te average yield per hectare was modest at around 4.6 tons in the
open elds, while the greenhouse production achieves yields ranging from 35 to 40 tons / ha.

Proizvodnja maline i kupine je u poslijeratnom periodu doivjela snanu ekspanziju i veliki broj
nezaposlenih je na svojim imanjima naao zaposlenje i dodatni izvor prihoda.
Od sorti maline koje su na naim prostorima zastupljene najvei procent oko 90% ini sorta
Willamette, oko 5-6% Meeker a ostalo su dvorode sorte Polana, Otom Blis i Heritage. Proizvodnja
maline u 2009. godini odvijala se na povrini od 1.031 ha, s ukupnim prinosom od 8.487 t. Malina
i kupina se gotovo 95% plasiraju na svjetsko i domae trite u zamrznutom stanju. Za uspjenu
realizaciju proizvodnje jagodastih vonih vrsta neophodna je dobra organizacija proizvodnje,
siguran otkup, stalni kupci i solidni preraivaki kapaciteti. Ovi e kapaciteti u kratkom periodu
prihvatiti, obraditi, u hladnjaama uvati i za izvoz plasirati jagodu, malinu i kupinu.

Raspberries and Blackberries
Production of raspberries and blackberries saw strong expansion in the postwar period, and a
large number of unemployed found jobs and an additional source of income in the production of
these fruits on their farms.
Out of a number of raspberry varieties grown in our country, the highest percentage of about
90%, goes to the Willamette variety, then Meeker variety, with about 5-6%, and the rest are
two-yield varieties Polana, Otom blis and Heritage. Raspberry production in 2009 was carried
out on an area of 1,031 hectares, with a total yield of 8,487 tons. Almost 95% of raspberries and

Vinogradarstvo i vinarstvo vana je privredna grana Bosne i Hercegovine.
Trenutno se, prema procjenama strunjaka, pod ovom kulturom nalazi 3-3.500 ha. U uzgoju su
vinske i stolne sorte vinove loze.
U uzgoju vinskih sorti preovladava uzgoj autohtonih sorti i to ilavke za proizvodnju bijelih vina, i
Blatine za proizvodnju crvenih vina. Kao pratee bijele sorte uzgajaju se jo Bena, Smederevka i
Krkoija, dok su za Blatinu pratee sorte Alicante bouschet i Trnjak. Osim navedenih sorti, jo se
podiu vinogradi sa introduciranim sortama Merlot, Caberne sauvignon i Vranac. Sporadino se,
u manjoj mjeri, uzgajaju i druge sorte kao to su Chardonnay od bijelih, Frankovka, Zweigelt, Pinot
crni, Plavac mali od crnih sorti.
U proizvodnji stolnih sorti uzgajaju se: Kardinal, Demir kapija, Italija, Viktorija, Black magic, Matilda,
Mishel Palieri, Muskat Hamburg, Kraljica vinograda, Beogradska rana, Sublima, Muskat Italia,
Prima, Lival, Ora, Red Global i dr. Stolno groe namijenjeno je za potronju u svjeem stanju.
Prodaja se vri na domaem i inostranom tritu.
Preko 97% zasaenih povrina nalazi se na podruju Hercegovine, dok je preostalih 3%
sporadino zastupljeno po cijelom prostoru BiH.
Kroz vie od dvadeset stoljea, povrine pod vinovom lozom su rasle i opadale, to je zavisilo od
migracija stanovnitva, ratova, politikih ureenja, a u novije vrijeme od trinih efekata uzgoja
vinove loze. Na podruju Hercegovine vinova loza ima veoma dugu tradiciju uzgoja, o emu
svjedoe ornamenti iz rimskog razdoblja (1. stoljee), pisani zapisi iz 14. stoljea, ornamenti na
stecima (15. stoljee), pisani zapisi iz turskog i austro-ugarskog razdoblja, i ta je tradicija ouvana
sve do dananjih dana.

Viticulture and Enology are important economic branches in Bosnia and Herzegovina.
Currently, according to experts, this culture covers from 3,000 to 3,500 ha. Grape vine and table
grape varieties are being cultivated.
Te cultivation of grape varieties is dominated by cultivation of indigenous varieties, such as
ilavka, for the production of white wines, and Blatina, for the production of red wines. Bena,
Smederevka and Krkoija are grown as the accompanying white varieties, while Alicante bouschet
and Trnjak are grown as accompanying varieties for Blatina. Besides these varieties, vineyards
with introduced varieties Merlot, Sauvignon and Caberne Vranac are being grown. Sporadically,
and to a lesser extent, other varieties are being cultivated, such as Chardonnay of white varieties,
and Frankovka, Zweigelt, Pinot Noir and Plavac mali of red varieties.
Te production of table varieties consists of: Cardinal, Demir Kapija, Italy, Victoria, Black Magic,
Matilda, Mishel Palier, Muscat Hamburg, Queen of vineyards, Belgrade Early, Sublima, Muscat
Italia, Prima, Lival, Ora, Red Global, etc. Table grapes are intended for consumption in fresh condition.
Sales are made on the domestic and foreign markets.
Over 97% of the planted area is located in Herzegovina, while the remaining 3% are sporadically
placed throughout the rest of the territory of BH.
For more than twenty centuries, areas under wine grapes have expanded and receded depending
on migrations, wars, political organization, and more recently depending on the market eects
of grape vine cultivation. In the area of Herzegovina, grape vine growing has a long tradition,
evidence of which are ornaments from the Roman period (1st century), written records from the
14th century, ornaments on the steci tombstones (15th century), and written records from the
Ottoman and Austro-Hungarian period. Tis tradition has been preserved to date.

4. PROIZVODNJA POVRA U BOSNI I HERCEGOVINI
Bosna i Hercegovina ima povoljne zemljine i klimatske uvjete za uzgoj veine vrsta povra.
Povre u Bosni i Hercegovini se u toku 2009. godini uzgajalo na 77.000 hektara. Po proizvodnim
povrinama najzastupljenije povre je krompir, grah, kupusnjae, paprika i crni luk, ali se dosta
uzgajaju i salata, krastavac, mrkva, bijeli luk, dinja, lubenica, cvekla.
U okviru povrtlarske proizvodnje, evidentan je najvii rast proizvodnje u zatienom prostoru
(plastenici i staklenici). Ova proizvodnja je sve zastupljenija i u sjevernomdijelu Bosne i Hercegovine,
kao i u okolini velikih potroakih centara, mada je donedavno bila u potpunosti smjetena u
regionu Hercegovine.
4. PRODUCTION OF VEGETABLES IN BOSNIA AND HERZEGOVINA
Bosnia and Herzegovina has favorable soil and climatic conditions for growing most sorts of
vegetables. Vegetables in Bosnia and Herzegovina were grown on 77,000acres in 2009. Measured
by production areas, the most common vegetables are potatoes, beans, cabbages, peppers and
onions, but lettuce, cucumber, carrots, garlic, cantaloupe, watermelon, beetroot are also frequently
grown.
In the vegetable production, the production in the protected areas (greenhouses) registered the
highest increase. Although until recently it was entirely located in the Herzegovina region, this
kind of production has also become increasingly common in the northern part of Bosnia and
Herzegovina, as well as in the vicinity of large consumer centers.

Bosna i Hercegovina ima veliki potencijal i dugu tradiciju uzgoja kvalitetnog merkantilnog krompira.
Istovremeno u Bosni i Hercegovini postoje regioni s povoljnim karakteristikama za proizvodnju
kvalitetnog sjemenskog krompira. Po proizvodnim karakteristikama izdvajaju se dva podruja:
Topliji juni dio (Hercegovina) i region Posavine gdje se uzgaja rani krompir. U tom podruju
krompir se vadi ve u maju.
Drugo podruje je hladniji brdsko-planinski dio (sredinja Bosna) gdje se uzgajaju rane, srednje
rane, i kasnesortekrompirazamerkantilnu potronju, industrijskupreradui sjemenskuproizvodnju.
Krompir je po povrinama najzastupljenije povre u Bosni i Hercegovini. Prema podacima za
2009. godinu, krompir je zasaen na 37.119 hektara. Tradicionalno, podruja gdje se dosta uzgaja
krompir su: Fojnica, Glamo, Bugojno, Travnik, Romanija, Semberija, juna Hercegovina, Lijeve
polje. Prosjeni prinos krompira u BiH je 11,3 t/ha, a prosjena potronja krompira po stanovniku
je 67,5 kilograma godinje.

characteristics for the production of quality seed potatoes. Two areas may be distinguished

Proizvodnja paprike na prostoru Bosne i Hercegovine odvija se u dva razliita klimatska podruja
i to podruje Hercegovine s mediteranskom klimom i podruje Bosne s umjereno-kontinentalnom
klimom. Dva razliita klimatska podruja osiguravaju kontinuiranu proizvodnju paprike tokom
proljetnog i ljetnog perioda. Proizvodnja rane paprike, babure, odvija se u podruju Hercegovine na
otvorenom polju i u zatienim prostorima (staklenici i plastenici). Berba u zatienim prostorima
poinje poetkom aprila, a na otvorenom polju koncem maja. U kontinentalnim podrujima berba
poinje u plastenicima koncem maja a na otvorenom polju tokom juna. Proizvodne povrine pod
kulturom paprike u Bosni i Hercegovini kreu se cca 3.600 ha. Proizvode se paprike raznih boja
i tipova (babure, paradajz paprike, roge i ipke) za svjeu upotrebu i za preradu. U 2008. godini
domai preraivaki kapaciteti otkupili su i preradili dio roda paprike za domae i inostrano trite.

U 2009. godini na podruju Bosne i Hercegovine pod paradajzom je zasaeno cca 3.700 ha.

Na sortnoj listi Bosne i Hercegovine nalazi se veliki broj sorti/hibrida paradajza to proizvoaima

Hercegovine zauzima povrinu od cca 2.800 ha, s tendencijom irenja zbog poveane potranje
prvenstveno korniona za kiseljenje.

Prosjeni prinosi u zatienom prostoru su 25-35.000 kg/ha, odnosno 2,5-3,5 kg/m2. Znaajni

Lettuce is grown in all parts of Bosnia and Herzegovina, particularly in the vicinity of large
consumer centers. Early production takes place in the protected areas and in open elds in
Herzegovina. It is also produced on private plots and gardens, and during autumn it is produced
in the protected areas for winter consumption when there is no other fresh vegetable. A trend
of increasing production of lettuce is noticeable, based on the number of lettuce seedlings being
produced, which is increasing every year.
Average yields in the protected areas are 25,000-35,000 kg / ha, or 2.5 to 3.5 kg/m2. Signicant
production regions are southern Herzegovina and Posavina.

Grah je povre koje se dosta gaji u BiH radi proizvodnje zrna i mahuna. U 2009. godini grah je
zasijan na 9.465 hektara, s prosjenim prinosom od 1,4 t/ha. Uzgaja se na manjim povrinama i
okunicama malih poljoprivrednih proizvoaa, kao i regionima veih potroakih centara. Pored
graha za zrno, dosta se uzgaja i grah za mahunu koji se dijelom koristi svje, a dio se prerauje
zamrzavanjem i konzerviranjem. Uzgaja se kao rano proljetno i kasno jesenje povre.

Tradicionalno, velike povrine pod kupusom (zahvaljujui optimalnim prirodnim uvjetima) na
lokalitetu su Gornjeg Vakufa gdje je ak 10% oraninih povrina pod kupusom, u Bijeljini, Lijeve
polju, Kiseljaku i junoj Hercegovini. U Hercegovini se kupus skida s polja tokom cijele zime i
proljea.
Kupus i kelj su se u Bosni i Hercegovini tokom 2009. godine proizvodili na 5.865 hektara, s
prosjenim prinosom od 13,87 t/ha. Kupusnjae, a posebno kupus je povre koje se gaji u svim
rejonima Bosne i Hercegovine, i to rana proizvodnja koja podrazumijeva ranu proljetnu sjetvu
za svjeu upotrebu tokom ljeta i kasnija sadnja kupusa koji stie u jesen i koristi se svje ili za
kiseljenje. Kupus za kiseljenje je traen proizvod koji se brzo i lako proda na domaem tritu, a
jedan dio se prerauje i izvozi.
Traditionally, large surfaces covered with cabbage are in the vicinity of Gornji Vakuf (thanks to
the optimal natural conditions), where as many as 10% of arable land is used to grow cabbage,
but also in Bijeljina, Lijeve Polje, Kiseljak and southern Herzegovina. In Herzegovina, cabbage is
harvested o the elds during the whole of winter and spring.

Onions
Onion is commonly grown and represented sort of vegetable in the tradition of the population of
Bosnia and Herzegovina. In 2009, it was produced on an area of approximately 5,004 hectares,
with an approximate yield of 6.3 tons / ha. Apart from growing for onion heads, green onions,
which are sown in autumn and mature for use in spring, are traditionally produced in Bosnia and
Herzegovina. Major producing areas are in Herzegovina, Travnik surroundings and in Posavina.
Crni luk je dosta uzgajano i zastupljeno povre u tradiciji stanovnitva Bosne i Hercegovine.
U 2009. godini proizvodio se na ukupnoj povrini od cca 5.004 hektara, s priblinim prinosom
od 6,3 t/ha. Pored uzgoja za glavicu, u Bosni i Hercegovini se tradicionalno proizvodi i mladi luk
koji se sije u jesen, a stie za upotrebu u proljee. Najvee proizvodne povrine su u Hercegovini,
okolini Travnika i u Posavini.
