i nht. Cac sn phm t sa b cng a dng va phong ph nht. T nguyn
liu sa b ngi ta ch ra v van cac sn phm c cu trc, trng thai va
hng v khac nhau.

V thanh phn, a s cac sn phm sa c thanh phn ch yu la protein
casein, song cng c sn phm nh b c thanh phn kt cu chnh la cht bo.

Tip nh n sa ti
1.Mc ch:
Gip cng nhn t ch bin thc hi n c toan b cng vi c tip nh n
sa ti sau khi ch ch bin.
2.Phm vi ap dng:
Ap dng i vi sa b ti nguyn li u.
3.Cng vi c chun b trc khi tip nh n sa ti:
- i vi 2 bn tip nh n S1,S2 phi c CIP khng qua 24h nu khng
dng.
- ng ng L1 phi c CIP khng qua 24h nu khng bao b ph n CIP c
k hoch CIP ngay.
- ng ng mm phi c Cip hang ngay cng may thanh trng va ui nc
nng ti thiu 5,nhi t nc 70C.
- i vi cac nha cung cp c bm va ng mm phi ui nc nng 70C ti
thiu la 5 cho bm va ng mm ca nha cung cp trc khi s dng.
- Kt ni ng ng mm vao u ra ca L 1 trn bng cu BC11 va la chn
bn cha.
- M van cp nc sau m t t van hi n nhi t cn.
Tip nh n sa ti:
- Khi sa ti v,tin hanh bao QA kim tra cac thng s:
+ ti : Xac nh ti ca sa bng cn 75C.Cn la 1 cht hao
nc.Khi cho vao sa,nu sa khng ti(c chua cao) thi kh
nng lam mt v hidrat ca cac Protein trong sa s nhanh,lam cho cac
phn t Protein lin kt li d dang va sa b ng t.
+ axit:Dng NaOH 0,1N. axit ca sa ti thng 1719T.

1.Mc ch :
Thanh trng nhm tiu di t cac vi khun gy b nh ma khng nh hng
ti cht lng ca sa,y la khu rt quan trng quyt nh n cht lng va
thi gian bo qun sn phm sa.
Ch :
- Khi nh n s lng <500l thi phi a vao bo qun lnh ho c xin kin ca
trng ca x l.Trn 500l thi thanh trng.

- Tiu chun ha ln 1:
Nh n kt qu ca QA v ham lng cht kh va cht bo tnh lng
nc b sung:
+ Chuyn canh khuy ca T8,(T9) sang tc cao.
+ B sung nc(nc thng)vao bng h thng bm va ng mm,u

trng.Nu sau 2 ngay vic kim tra vi sinh vt cho kt qu t tiu chun thi 3
ngay sau c th xut sa khi kho.

Chu y:
Thi im chy CIP cho tng cm thit b la khng trng nhau.
An toan trong qua trinh chy ra:
- Tun th an toan khi chy ra vi ha cht : Xt,axit.
- Tun th an toan khi lam vi c nhi t cao.
Trc khi v n hanh ALCIP 1 va ALCIP 2 cn phi:
- Tip nh n ca,kim tra s giao ca bit nhng thit b nao va c CIP,thit
b nao cha CIP va cn CIP nhng thit b nao c k hocg thc hi n.
- Tin hanh kim tra : Hi 2.53.0 bar,kh nn 6 bar,nc cp 3 bar,ha cht
trong bn tun hoan ,ha cht cn cp pha sn.i vi xt phi pha va
ngu i trc khi cm vi bm vao,pha t l 1:1.
- Kim tra h thng u ni cac bm hi
- Khi tt c cac iu ki n kim tra t yu cu thi mi tin hanh chy CIP
