Coffee Poached Pears.

When coffee can really express itself


1 Pear per Each
Serves: 4- 6
Cooking time: 30 minutes
Ingredients:
750ml strong coffee
90g caster sugar
6 cardamom pods
2 cinnamon sticks
2 bay leaves
2 cloves
4 pears
Serve with Vanilla Ice Cream and garnish with Mint

Method;
1. Place the coffee, sugar, cardamom pods, cinnamon sticks, bay leaves and cloves in a small saucepan.
2. Bring to the boil, stirring whilst the sugar dissolves.
3. Peel the pears, using a vegetable peeler unless you have good knife skills to thinly sliver away.
4. Place the pears in the coffee, cover with baking parchment paper and weigh down with a small plate
5. Simmer for 20 minutes, or until the pears are tender. Remove the pan from the heat, and leave to cool in the liquid.
Strain off the 300ml coffee mix and set aside for another recipe: Coffee Jelly
6. Reduce remaining cooking liquor until syrupy consistency, cool and serve with pears, whipped cream or alternative
cream and coffee jelly.
