Carols Baked Potato Soup

lb. bacon, sliced into thin strips and browned


3 Tbs. unsalted butter
1 onion, minced
c. flour
2 c. chicken stock
3c. milk
1 t. salt
t. pepper
2 lbs. potatoes, microwaved then skinned and diced
1/3 c. sour cream
1 Tbs. vinegar
Cheddar cheese, shredded
Brown bacon in pot and remove to paper towel. Remove most of the
bacon grease from pot. Melt butter and saut onion for about 6-8
minutes. Add flour. Blend in stock, milk, salt and pepper. After
thickened, add potatoes, sour cream and vinegar.
Serve in bowls with sprinkling of shredded cheddar cheese and bacon
bits.
