Carols Oven Fried Chicken

1 1/3 c. rice crispies, crushed


c. cornmeal
1 c. seasoned bread crumbs
t. cayenne
2 t. salt
t. pepper
t. paprika
1 T. canola oil
Boneless chicken breasts
c. mayonnaise
1 t. dijon mustard

Prepare a foil lined cookie sheet with wire rack on top. Spray with oil. Dip
each chicken breast in the mayo-mustard mixture, then shake in zip-loc bag of
the other ingredients. Put on wire rack. Spray with cooking spray.
Bake at 400 F for 30 minutes.
