Lamb Stew
Ingredients
Lamb
Chopped medium red onions
Garlic cloves
Chopped scallions
Chopped cilantro
White vinegar
Chicha de Jora
Aj Panca (dried chili pepper in
powder)
Oil
Salt
White pepper
Cooked white rice
Cooked beans

Preparation
Season the lamb meat with vinegar in a bowl.
Let the meat marinate, stirring it occasionally.
Heat the oil in a Dutch oven over medium high heat.
Add the marinated meat and saut until most of the liquid cooks off.
Mush up the garlic, cilantro, and Chicha de Jora.
Add the onions, scallions and Aj Panca.
Cover and let the mixture cook down.
Add salt and pepper to taste.
