60ml (1/4 cup) vegetable oil
2 tablespoons brown sugar
175g (1/2 cup) honey
1 teaspoon vanilla extract
1 egg, lightly beaten

rectangular baking tin with baking paper.
Step 2 Place the rolled oats, coconut, pepitas, chia seeds, cinnamon, dates and cashews in a large bowl.
Step 3 Place the oil, sugar honey and vanilla in a medium saucepan, cook stirring over a medium heat until
sugar is dissolved and ingredients are well combined. Add the honey mixture to the dry ingredients and
stir to combine. Add the beaten egg and mix until all ingredients are well combined. Using slightly wet
hands, press mixture firmly into prepared tin. Press mixture with the back of a spoon to get a smooth
even surface.
Step 4 Bake in preheated oven for 40-45 minutes, or until an even golden brown. Set aside to cool completely
