Tortilla Soup

Ingredients

bunchofcilantro(leavesonly)
23garliccloves
smallonionschopped
6cupsofchickenstock/broth
1(14.5ounce)canoftomatoes
1tsp.groundcumin
1tsp.salt
2TBSPcornstarch(onlyifyouwantitthick)
vegetableoil
12cupsofcookedchicken(2.ozperserving)
montereyjackcheese(1.ozperserving)
12avocados,peeledpittedandsliced.

Directions
Pureecilantro,garlic,onions,andtomatoesinablenderorfoodprocessor.Heatstock/brothon
stove.addpureedmixture,cumin,andsalttostock/broth.bringtoaboil,reduceheatandlet
simmerforabout1hour.After,stirincornstarchintostock/broth.frytortillasinoiluntilcrisp,drain
well.Addchickentostockandgarnishwithshreddedcheese,tortillastrips,avocado,sourcream.
