Although The Rock Café does offer gluten free options it ddesnot offer very many options
compared to the variety of choices for non-gluten free people. After some research, it has
been found that itis not only beneficial to gluten free persons to have a separate station, bu it
‘would also benefit workers by driving down the rsk of cross-contamination between gluten-
Containing and gluten fre foods.
It provides a solution toa few different problems, whether seemingly minor or major, such
the risk of eross-contamination when preparing foods with gluten inthe same area as those
that do not contain gluten; improvement in student happiness by allowing certain gluten free
students to come to one area inthe café to obtain ther food as opposed to several areas; and it
takes stress off of the food preparers because the ones working inthe specific gluten free area
know what to expect, and the rest in the non-gluten free areas don’t have to worry so much
about changing their gloves or getting clean utensils when a gluten free student comes.

‘This report highlights the importance of having a gluten free dining g€tin in The Rock Café
and the negative effects of having separate stations offering a few glut itemsat each.
‘The purpose of this report isto provide the Director of Dining Services andthe Dining Services|
Committee with an assessment of the problems with the current dining setup in the Rock Café,
Recommendations for solving the problem are presented for consideration
Gluten Is the protein found in wheat, rye, barley, triticale, and spelt. Those with Celiac
Disease cannot eat gluten without serious problems. Ifa Celiac eats gluten, the body responds
with an abnormal immune rperonse that harms the small intestine, The small intestine is lined
with finger-like projections‘ealled vill, which help increase the surface area forthe absorption
of nutrients. When a Cella¢ eats gluten, the vil flatten eae intestinal ining becomes
damaged, decreasing the area that can absorb nutrient€{WebMD.com). It's important thatthe
small intestine work properly and be able to absorb all necessary nutrients or else the rest of
the body could begin to suffer, making Celiac Disease a potentially life-threatening disease If
those with it are not careful
