the product, the market, the competition, guest segmentation and evaluation.
The six basic elements of the marketing planning process are mission statement, situation analysis,
action plans, catering plan, comparatative statistics and promotional events calendar.

SMERF means Social, Military, Education, Religions, Fraternal. This market is targeted on the down
season of a hotel. When the hotel needs to make money but can sell rooms at a lower rate.
The Hotel and Food Beverage divisions mission is to produce adequate profit. Any operation needs to
make a profit. Food cost primary expense 35% labor cost 30% Misc Cost 15% Utilities 7%
Good chef does not make a great restaurant; you cannot just hire a good chef and leave it to them.
Environment in fast food places are not very good, especially the smell.
