Amla Murabba

Ingredients:

Amlas
Sugar
Water
Lemon juice
Salt
Cardamom powder

Method:
1. Wash amlas thoroughly.
2. Prick them with fork and soak them in plain water for 3 to 4 hours. Drain the water.
3. Boil water in a separate pan. Add the amlas and cook in high flame for 10 minutes.
Remove from water.
4. Boil 2 cups of water in a thick-bottomed pan. Add sugar to boiling water and mix well.
5. When the sugar syrup starts to boil, add the amlas and cook for 15 to 20 minutes in slow
flame till they become soft.
6. Keep and cover in cool dry place for two days, so that the amlas soak in the syrup.
7. On third day, drain the amlas from sugar syrup and boil the syrup till it reduces to 1 or 2string consistency. Now add cardamom powder, limejuice and salt and mix well. Boil for
a few minutes and add amlas. Cook for 2 to 3 minutes and turn off the flame.
8. Keep aside to become cool.
9. Then store it in glass jar.
