Preheattheovento180C/350F/gas4.
Peelthegarlic,thenaddtoapestleandmortarwiththepaprikaandhalfthethymeleaves.
Bashwelltoaroughpaste,thenmuddlein2tablespoonsofoliveoilandseason.Zestthelemon
intoaseparatebowlandsetaside.
Trimtheoutercauliflowerleaves.Trimawayanddiscardthestalksothecauliflowercansit
flat,thencutacrossintothebase.Ruballoverwiththepaprikapaste,thenplaceinamedium
casserolepan.Drizzleoverthesherryandsqueezethelemonjuiceontop,thenpopinthehot
ovenforaround50minutes,oruntiljusttenderandgolden.
Takethepanoutoftheoven,thenpourintheplumtomatoes,tearingorslicingthemupinto
chunks.Sprinkleoverthelemonzestandpickovertheremainingthymeleaves.Returnthepan

Meanwhile,placeamediumfryingpanoveramediumlowheat.Addthealmondsandtoast
