How do you make macaroni and cheese even better? Three words: Just add bacon!

For the cheese sauce
2 tablespoons butter
2 tablespoons flour
1 cup milk
pinch of salt and pepper
1/2 cup plain yogurt
1/2 cup grated cheddar cheese,
plus extra for topping
400 grams elbow macaroni,
cooked according to package directions
200 grams bacon,
1 Make the cheese sauce: Melt butter in a saucepan. whisk in flour and cook butter until the
mixture turns light brown, forming a roux. Slowly add milk and continue mixing until the roux is thick
but smooth. The sauce will thicken slightly. Season with salt and pepper.
2 Add yogurt, then add cheese. Mix until completely smooth and cheese has melted.
3 Fold in macaroni. Add half of the bacon; mix well. Sprinkle remaining bacon and more cheese on
top.
4 Transfer mixture to an 8x8inch baking dish. Bake in a 350F oven for 20 minutes or until top is
golden brown.
