Ice Box Bran Muffins:

Mix together in a large bowl:


1-10 oz box of Raisin Bran
5 c. flour (all-purpose)
3 c. sugar
4 t. baking soda
( I add craisins, nuts, coconut, other dried fruit-whatever sounds good)
Mix together:
1 qt. buttermilk
1 c. salad oil
4 large eggs, beaten
Add liquids to dry ingredients-mix well. Store in a sealed container in the fridge
( or if y ou're really old, the "ice box")
The batter will keep up to 6 weeks.
TO BAKE: Fill well-greased muffin tins 3/4 full. Bake at 400 for 15-20 minutes.
