Soup is Good
for the Soul
Growing up, when the weather turned cold,
Monday was always soup night. I continue this
tradition for my family. The soup is always fresh,
and always from scratch. It is one of the easiest
meals to prepare, and one of my favorites.
The basic chicken or beef soup can have many
variations. Use your favorite vegetables to create
something special; add your leftovers and create a
new meal. When preparing a soup utilize all the
vegetable parts. Add celery tops, leaves, parsley
leaves and stems (stems hold more flavor) neck
bones and any parts of the chicken except the
chicken liver; when boiled the liver will alter the
chicken broth, making it muddy and unclear. Cook
potatoes separately just until tender and add to
soup at the end. Do not overcook
potatoes.
Anything can be added to a basic
