Ingredients:

o 8 t. Olive Oil
o 12 oz. Soft Tofu, Crumbled
o 2 Large Red Bell Pepper, Chopped
o 4- 4 Portobello Mushrooms
o 2 c. Chopped Spinach
o 4 oz. Mozzarella
o 2 t. Oregano
Directions:
o Heat 4 t. oil in a saut pan, and then add tofu and vegetables.
o Cook for 5-7 minutes, stirring often.
o In a separate saut pan, heat 4 t. oil and gentle cook Portobello mushroom.
o Carefully flip after browned.
o Serve on plate and top with cheese and oregano.
Clean-Up:
o Put dirty dishes and equipment away.
o Sanitize area.

o Active 25 minutes
o Passive 5 minutes
o Total 30 minutes
