Baked Chicken Pasta Ingredients:

¾ Goody Elbows Pasta pack (Shape 19)

4 chicken breast fillet

¼ cup (60ml) olive oil

1 onion, chopped

1 carrot, chopped

3 beef slices, chopped

2 zucchini, chopped

440g Goody peeled & chopped tomato can

1/3 cup (90g) sour cream

1 ½ cups (185) cheddar cheese, grated


Steps:

1-Trim the chicken of excess fat and tendons.

Preheat the oven to 180?C. Cook the macaroni in a large pan of boiling salted water until al dente (slightly chewy) and drain.

2-Slice the chicken breasts into long strips and then cut into cubes.

Heat the oil in a pan and cook the chicken quickly over high heat until browned.

Drain chicken on paper towels and set aside.

Add the onion, carrot and beef to the pan and stir over medium heat for 10 minutes.

Add the zucchini and tomatoes, bring to a boil and simmer for 5 minutes. Remove from the heat.

3-Combine pasta, chicken, tomato mixture and sour cream, season with salt and pepper to taste.

Spread into a shallow ovenproof dish and top with cheese.

Bake for 20 minutes or until golden and cooked through.
