Potato Cakes

2 c mashed potatoes
1 egg white
2 tbl chopped peeled onions
2 tbl flour
1/8 tsp salt
1/8 tsp ground black pepper
1 tsp vegetable oil
1. In medium sized bowl, combine potatoes, egg white,
onion, flour, salt and pepper till completely mixed.
2. Heat oil in saucepan over medium heat.
3. Drop batter into pan 2 tablespoons at a time.
4. Brown on each side for about 3-5 minutes.
5. Drain on paper towel and repeat with remaining batter.
