Boil the rice in another container. When cooked, rinse and strain the rice.
Pour half of the rice into the meat and beans mixture. Arrange in such a
way that the meat and bean mixture is on top of the rice.
Cover the meat and beans mixture with the remaining half of the rice. Cook
over low flame for ten more minutes.

(Strips Of Douhg/Macaroni-rice)
Ingredients:
Rice % Jeup
Strips of dough/macaroni : 2eups
Raisins : 1/2cup
Leeks : I2cup
Water : 4 cups; another 2 liters
Butter
Cinnamon powder
Pepper
Salt
Nutmeg
Onion
3 tablespoons; another 2 teaspoons
1/2 teaspoon
1/2 teaspoon
1/2 teaspoon; another 1 teaspoon
1/2 teaspoon
1 piece (chopped)
‘Mutton (shoulder) 2 1 kilo (cut into pieces)
Procedure:

Melt the 3 tablespoons of butter. Fry the chopped onions, add the cinna-
mon, salt, pepper and nutmeg. Add the mutton and water. Boil for 30
minutes.
‘Melt the 2 teaspoons of butter and fry the raisins and Reshteh (strips of
dough/macaroni) for five minutes.
Wash the rice several times and boil in 1 teaspoon water until it is half-
cooked.
Add the Reshteh to the half-cooked rice and boil for three minutes. Check
if the Reshteh is cooked. Mix the rice and Resteh thoroughly and boil until
the rice and Reshteh are both cooked. Rinse the Reshteh and rice in cold
water and strain.
Grease the bottom of a casserole with butter. Pour in half of the Polow (rice
and Reshteh). Place the meat and onion mixture over the Polow. Pour in
the rest of the cooked rice and Reshteh to cover the meat mixture.
Saffron and butter may be added to enhance the flavor and aroma of the
Polow.
Cook the Polow with moderate heat.

Ingredients:
Meat : WU2kilo
Butter : 2 tablespoons; another 1 1/2 tablespoons
Salt 2 tablespoons; another 1/2 teaspoon
Pepper 1/2 teaspoon
Cinnamon 1/2 teaspoon
Nutmeg, 1/4 teaspoon
Raisins 1/2 cup
Melted butter 1/2 cup
Rice 1 1/2 cups
Lentils 3/4 cup
Onion 1 piece (chopped)
Water : 2liters
Procedure:
1. Fry the meat and onions in 2 tablespoons of butter. Add the 1/2 teaspoon
salt, pepper, cinnamon powder, nutmeg.

4. Pour half of the strained rice on a greased pan. Pour the mixture of meat
and seasoning, over the strained rice. Cover the meat mixture with the
remaining rice. Cook for a few minutes.
