CHOCOLATE BROWNIES IN A SKILLET:

So this was a bit of an experiment for me--and a successful one, at that! The recipe I used as the
backbone of this is slightly adapted from Ina Garten's recipe (I use a bit more chocolate--go
figure--and she puts hers in the oven...I don't use the oven at all).
Ingredients:
-1 stick of unsalted butter
-half a bag of chocolate chips/chunks (around 6 ounces), reserving a handful to add later
-half a bar of unsweetened chocolate (around 3 ounces), roughly chopped
-2 eggs
-2 teaspoons vanilla extract
-1/2 cup sugar
-1/4 cup all-purpose flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-2 teaspoons instant coffee granules (optional)
Directions:
In a bowl, stir together together the eggs, coffee, vanilla and sugar. Then in a separate bowl, stir
together the flour, the baking powder and salt. Have each of these bowls ready to dump into the
skillet when it's time for them...
Put a skillet (a very seasoned cast-iron skillet is best) on medium high heat on the stovetop and
add the butter, chocolate chips, and unsweetened chocolate. Stir until it's all melted.
Lower to heat. Add the egg mixture, stir, then add the flour mixture and stir again. Finally, add in
that reserve handful of chocolate chips.
Cover and cook for 5-8 minutes, until the top looks cooked through. Take it off the heat and let
cool for a few minutes so you don't burn your tongue...then dig in! My favorite way to eat this is
with a side of ice cream smile emoticon
