80g butter, cubed

Step 1

Preheat oven to 200C. Lightly dust a flat baking tray with plain flour. Sift self-raising
flour into a large bowl.
Step 2

Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.

Make a well in the centre. Add 1 cup of milk. Mix with a flat-bladed knife until
mixture forms a soft dough, adding more milk if required. Turn onto a lightly floured
surface. Knead gently until smooth (don't knead dough too much or scones will be
tough).

Pat dough into a 2cm-thick round. Using a 5cm (diameter) round cutter, cut out 12
rounds. Press dough together and cut out remaining 4 rounds. Place scones onto
prepared baking tray, 1cm apart. Sprinkle tops with a little plain flour. Bake for 20 to
25 minutes or until golden and well risen. Transfer to a wire rack. Serve warm with
jam and cream.

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
8 tablespoons cold unsalted butter, cut up
1/4 cup granulated sugar ( use 1/3 for slightly sweeter scones)
2/3 cup milk
Directions
Heat oven to 425F (220 Celsius).
Put flour, baking powder and salt into a large bowl; stir mix well Add butter and cut
in with a pastry blender or rub in with your fingers, until the mixture looks like fine
granduals.
Add sugar; toss to mix.
Add milk and stir with a fork until dough forms.
Form dough into a ball and turn smooth side up.
Pat or roll into a 6 inch circle.
cut each circle into 6 or 8 wedges.
place wedges on an ungreased cookie sheet- slightly apart for crisp sides, touching
for soft.
sprinkle desired amount of cinnamon and sugar on each scone.
Bake about 12 minutes, or until medium brown on top
