one and half kg potato, sliced
3tablespoons olive oil
3medium onions, sliced
800g canned tomatoes, chopped
450g ground pork or 450 g pork mixed with beef
250ml beef stock
salt and black pepper, to taste

Recipe
DIRECTIONS
1. Heat the oil in a large pan or wok and use to fry the
potatoes for about 10 minutes or until just softened.
2. Add the onions and fry for a further 10 minutes.
3. Transfer the mixture to an oven-proof casserole dish
then top with the meat and tomatoes.
4. Season with salt and black pepper then stir to
combine.
5. Pour the beef stock over the top then transfer to an
oven pre-heated to 170C and bake for about 60
minutes. Serve hot.
