Impossible Pie (Hilda Rivers Impossible Pie)

A delicious bacon and egg type pie – very easy to make and great hot or cold!

My mum gave me this recipe. It was a recipe used by her mum. I think grandma
originally got it from her friend Hilda Rivers… and who had it before that is
unknown!

Ingredients

4 eggs
2 cups milk
½ cup self raising flour
Salt and pepper
2 or 3 slices bacon, chopped
1 cup tasty cheese, grated
1 onion
1 tin or corn – or cut the corn from 2 cobs
100 grams butter, melted
1 good handful of baby spinach (optional)
Parsley to taste (optional)

Method

1. pre heat oven to 180 celcius


2. Sift the flour into a large mixing bowl. Add the eggs, milk salt and pepper
and beat well to combine.
3. Add the remaining ingredients.
4. Bake in a large pie dish for 40 minutes. (If you prefer you can use 2
smaller dishes – eat one fresh and the other cold! Yum!)

SMELLS SO GOOD!
