The Question Is..

Milk is to undergo UHT (Ultra High Temperature) processing with a concurrent tubular heat
exchanger being used as the method of heating. UHT lowfat (2%) fluid milk is to be produced at
5000 kg/h with a desired time/temperature of 2 second at 150 0C. Milk with an initial temperature
of 150C is fed to the heat exchanger and steam at 543.1 kPa and 100% quality is used as the
heating media. Condensate at 1550C flows from the steam trap. What is the required flow rate of
steam to the heat exchanger? The composition of 2% lowfat, milk is given as: 89,2% moisture;
3,3% protein; 2% fat; 4,8% carbohydrate; 0,7 ash.
First time we must make a diagram
Steam
P = 543,1 kPa
Ms = ?

HEATING

Feed, Milk
T = 15oC

Product, Milk
T = 150 oC

Condensate
T = 155 oC

After that we must know the Cp the molecule, search in google

Cp moisture

: 4,187 kJ/kgoC

Cp protein

: 1,549 kJ/kgoC

Cp fat

: 1,657 kJ/kgoC

Cp carbohydrate

: 1,424 kJ/kgoC

Cp ash

: 0,837 kJ/kgoC

Cp total in Milk

= (4,187 kJ/kgoC)(0,892) + (1,549 kJ/kgoC)(0,033) + (1,657 kJ/kgoC)(0,02) +

(0,837 kJ/kgoC)(0,007)
= 3,894 kJ/kgoC

Now we know the (Energy in = Energy out)

HM.In + Hsteam = HM.Out + Hc
We search the HM.I
H = mmilk . CP . (T2 T1), T1 = 0
HM.In = (5000 kg/h)(3,894 kJ/kgoC)(150C 00C) = 292,050 kJ/h
Afterthat, we search the Hsteam
Hsteam = msteam . Hv

Hv we gets from the steam tables (Hv) is 2748.5 kJ/kg

So, Hsteam = (msteam ) . (2746.5 kJ/Kg)

And then we must search HM.Out
HM.Out = mmilk . CP . (T2 T1), T1 = 0
HM.Out = (5000 kg/h)(3,894 kJ/kgoC)(1500C 00C) = 2,920,500 kJ/h
After that we search the Hc
Hconden = mconden . CP . (T2 T1), T1 = 0
Hc = (mc)(4.18 kJ/kgoC)(1500C 00C) = (mc)(627 kJ/kg)
So we will know the flow rate of steam from the HM.In + Hsteam = HM.Out + Hc
H + H =
M.I

H
H
M.Out +
condensate

292.050 kJ/h + (ms) ( 2.746,5 kJ/kg) = 2.920.500 + mcondensate (647,9 kJ/kg)

If ms = mcondensate = m
292.050 kJ/h + 2746,5 m = 2.920.500 kJ/h + 647,9 m

(2746,5 647,9) m = 2.920.500-292.050 kJ/h

2098,6 m = 2.628.450 kJ/h
m = 1252,47 kJ/h
