Arabic spice
Cumin seed /zeera
15gm
Black paper
5gm
Cinnamon sticks/daar cheeni
1tsp
Nutmeg/jaifal
1tbs
Cardamom/ ilaichi
10gm
Cloves/long
10gm
Star anise/badyaan
4gm
Grind all spices into powder form:

Ingredients
Chicken whole

Onion chopped

Garlic chopped
50gm
Arabic spices
2tbs
Salt
2tbs
Sumac powder
1tbs
Turmeric powder/
1tsp
Vinegar
50ml
Olive oil
100ml
Method
Mix all ingredients in a bowl for marination
Make deep cut on whole chicken and marinate it
Place chicken in baking tray pour cup of water in tray,
water will help to give moisture and prevent chicken and
spices to burn
Bake chicken for 45 minutes then do foil rape it and place
again in oven for 15 minutes.

RICE FOR MANDI


Ingredients
Rice
Onion chopped
2tbs
Garlic
1tbs
Arabic spices
Sumac powder
Turmeric powder/dhanya
Salt
Oil

Method
Heat oil saut onion and garlic
Add Arabic spices, sumac powder and add pre soaked rice
Saut it for 5 minutes add turmeric and salt and mix it well
Add water cock for a while then give it proper DUM
After 5 minutes give it DUM of burning coal.
