Glenns Kickin Corn Salad

Ingredients:
3 ears of corn (shucked and cleaned)
1 clove of garlic
2 tbsp butter
1 tsp jalapeo pepper
cup chopped bacon (crispy)
1 tsp lime juice
cup chopped apple
Salt and pepper to taste
Directions:
1). Cut the corn off the cob and discard the cob.
2). Place the bacon in a 400 degree oven (or cook on strove top) until crispy.
3). Chop your jalapeno pepper and garlic and sit aside.
4). In a medium sauce pan melt butter over medium low heat.
5). Add garlic and jalapeno and sweat for 2 minutes.
6). Add corn and cook for 2 minutes or corn is warmed through.
7). Remove corn mixture from pan and pour into a bowl.
8). Chop apples and add them to the bowl.
9). Pour lime juice over corn mixture and mix.
10. Just before serving add chopped bacon over the top.
Thoughts of improvements:
1). Grill corn
2). Add caramelized onions
3). DO NOT COOKServe as a cold dish. (Cook bacon)
4). Add parmesan
