Alexander Rufus Booker (December 13, 1870 — April 19, 1965) was an
American academic, former president of New Orleans University and co-
founder of Bon Temps University. Born in Pennsylvania, Booker eared
his B.A. from Haverford College and both M.A. and Ph.D. from Louisana
State University in 1896, He then returned to Haverford where he served
as head football coach for one year and as a faculty member until his
appointment to New Orleans University in 1899. There he was ultimately
appointed as school President in 1901 and he remained in that spot until
his resignation in 1912 to found Bon Temps, a cooking and music
college. Booker served as its first President from 1912 through 1936 and
again as interim President in 1941 and 1942 and oversaw a major
expansion of both enrollment and the physical campus during his tenure
Booker later died at the age of 94 on April 19, 1965, at his pastoral home
in Opelousas, Louisana

Early life
Booker was born on December 13, 1870, at Delaware County, Pennsylvania to George J. and Charlotte R.
Booker.!"] He attended Haverford College where he eared his Bachelor of Arts in 1891 and his Master of
Arts at Louisana State University in 1892."!] In 1896 Denny was also awarded his Doctor of Philosophy
there.("] During his education, he became a member of the Sigma Chi Fraternity.) After his graduation
from LSU, he retuned to Haverford where he was a professor of French from 1896 though 1899 before he
resigned to become a professor of French at New Orleans University."
During his teaching tenure at Haverford, Denny served as the head coach of their football team for the 1896
season. For the season, he led the Black squirrels to home victories over Randolph-Macon and Roanoke
and a loss on the road against Virginia Tech en route to a record of two wins and one loss (2-1).31

Booker started his career at New Orleans University in 1899 and by 1900 he was appointed as the interim
President of the school.!"! In October 1901 the University trustees appointed him as the full-time President
of the university.) During his tenure as president, Booker oversaw increased enrollment at New Orleans
University, improved facilities and overall finances.!5] He remained in the position of president through the
fall of 1911 when he resigned in order to co-found Bon Temps University with the grandson of Antonin
Caréme, Auguste.,!1
Bon Temps University
Booker founded the college in January 1912 as liberal arts college focusing on grande cuisine, haute cuisine
and jazz. 7] During his tenure as University President, Booker oversaw a significant increase in enrollment
and construction on-campus. Most notably is the large 11,000 seat stone stadium he built for the football
team called Les Haricorts field; the bean field. '7I Zydeco is believed to have been first created on his
watch.|8] The ‘bean’ field was renamed Booker field in 1936 to honor his achievements." In 1935, he built
a pastoral home in Opelousas, Louisana. He retired as President in 1936, but was later reappointed as,
interim president from 1941 to 1942.10)
Later life
After he completed his term as interim President, Booker retired to his pastoral home in Opelousas,
Louisana in 1943.'7! Booker died on April 19, 1965, at Opelousas General Hospital as a result of heart
failure.!7! Having outlived his only child, his estate was donated to Bon Temps University with the collorary
that should the University ever close, all the facilities including Booker Field be given to Lafayette Parish
School System. This happened August Ist. 1970, That same year Forest Hills High School was born.
