Welcome Home Stir-Fry

Ingredients
2 cups of rice cooked according to package directions (white or brown…your
preference)*
2-4 chicken breasts (skinless, boneless or bones removed)*
4 celery stalks, sliced
2 cups broccoli slaw
1 cup shredded carrots
½ to 1 red onion, sliced or chopped (your preference)
½ head Napa cabbage
3 cloves garlic (or more, your preference)
1-2 Tblspn Olive oil
½ cup+ soy sauce
Optional, ¼ cup white wine (for liquid rather than using more soy sauce)
Salt and pepper to taste

Prep
1. Prepare rice according to package directions.
2. Cut chicken into thin slices, approximately 2”long.
3. Heat oil over medium high heat in wok or large pan.
4. Add chicken, garlic, salt and pepper, and cook until no longer pink.
5. Remove chicken and set aside.
6. Add oil if necessary to same skillet (careful) and cook onion and celery until
tender, about 4-5 minutes.
7. Add chicken and cook for approximately 1-2 minutes.
8. Add soy sauce, (and if desired, white wine***) broccoli slaw, carrots, and cabbage,
cook until crisp tender.

Serve over a portion of rice.

NOTES
*I often substitute whole wheat pasta for the rice.
**Flank steak works really well too.
***If I need more liquid, I try to avoid adding too much soy for the salt factor.
Instead I add white wine and sometimes some water for liquid.
