A Proposed Production of Pickled Watermelon Rind and Its


Distribution to Barbecue Houses and Restaurants within
Cebu City

RATIONALE

In the present, different varieties of foods are being indorsed or marketed. With
the new trend of fascinating packages and famous advertisers, lots of people are
being attracted of buying such without the knowledge of its influence to their
health which maybe positive or negative effect.
Filipinos are well-known food-lovers. Some are very cautious of what type of
foods are they in-taking, while others are very abusive in eating. Such
abusiveness in eating would sometimes results to sickness or illness. With their
fondness, others would even spend money just to have a bite of such food.
This study is conducted by the researchers, to promote a healthy living for
Filipinos and for them to be aware of that something least costly, environmental
friendly and health beneficial variety food exists. Usually, people discarded foods
or parts of foods that for them are considered unhealthy. Without knowing that
they really miss out the health benefits from it which was never considered by
them. One of these often discarded foods is the watermelon rind. After being able
to eat up all the watermelons flesh part, watermelon rind will end up in the
trashes or garbage bins and it is very wasteful. Watermelon rind is not only a
preventer of watermelons flesh spoiling; it contains additional vitamin C, fiber,
potassium and other health benefits.
According to the Journal of the Science of Food and Agriculture one of the
healthy benefits of watermelon rind is Citrulline, which fights free radicals,
provides heart and immune system protection and keeps harmful toxins from
staying in in the body. Studies also presented that watermelons citrulline leads to

weight loss for at least 30% and helps lessen muscle fatigues, which is very
helpful to athletes.
Watermelon rind is edible; therefore it is safe for in-takes. Finding a use for this
often-wasted food, like eating or using it in other relevant ways would not only
provide medical benefits to the body, it would at the same time lessen the
amount of waste produce every day.
