Luscious Pancakes, From Scratch

Ingredients:
2 cups all purpose flour
3 teaspoons of baking powder
1/2 teaspoon of salt
2 teaspoons of vanilla extract
2 tablespoons of butter (melted)
1 3/4 cups of 2% milk
2 eggs (large)

Preparation:
Add the milk, eggs, vanilla extract, and the melted butter into a blender. Blend on high
power for 30 seconds until you have a homogeneous mixture.
Add the salt, baking powder the flour on top on this mixture. Blend on medium power for
30 seconds or until all the flour has been incorporated into the mix, use a spoon to detach
any flower that has stuck to the wall of the blender jar; then blend on high power for two
minutes.
Test for consistency. If the batter is too runny (liquid) then add two tablespoons or flower
or until the mixture is thick, but still fluid. Conversely, if the batter is too thick, then add a
tablespoon of milk until you get the desired consistency.
Preheat a non-stick skillet (or a thick frying pan) to medium or medium/low for 2 minutes.
pour 1/3 cup of the batter and cook until bubbles have formed, but dont let them pop.
Then with the aid of a spatula, flip them over and cook for 30 more seconds.
Enjoy your delicious pancakes with jam or condensed milk.
