Vache Qui Rit Soup

Serves 4
Ingredients
1 finely sliced Onion
1 kg chopped Zucchini
Salt
Pepper
Cumin optional
500 ml water or chicken stock
3 to 4 triangles VCHE QUI RIT (happy cow cheese)
Method
1. Put the onion and zucchini in a pot and pour the water over. (The water
will not cover the vegetables.)
2. Season with salt and pepper, add the cumin, cover, and cook until soft,
about 15 minutes.
3. Add the cheese and pure (along with any fresh herbs such as mint,
chervil or dill, if you want them).
4. Gently reheat to serve
