Reflection Statement Nutrition 401

Based on the required text I was under the impression that there would be much more
chemistry and chemical reactions in nutrition 401. I feel as though nutrition 401 was
barely an extension of nutrition 205. In fact, I used the nutrition 205 textbook to review
for most tests in nutrition 401. It would have been nice if there were more science in
advanced science of foods. With the exception of surface tension, gelatinization and a
few others, there werent many chemical reactions though the required text, Introduction
to Food Chemistry by Fenneman was all chemistry.

There were many issues with the overhead monitor and many times articles and/or
drawings and illustrations were difficult to see. The technical issues with the computer
were also a distraction and therefore made it difficult to follow during discussions. There
were several weird and distracting sounds throughout the semester as well, which made
being in the classroom uncomfortable, in addition to a knock on the back door, which got
us all a little concerned.

Linda really cares about her students and really tries to get her students engaged, however
she does not have the education required to teach this class. Though she is more than
willing to explain concepts over and again and in different contexts to make them more
understandable, she comes across and not really understanding the subject herself. She is
always available for her students and will go above and beyond to help them succeed,
however in my opinion, food science is a very challenging subject and should be taught

by a food scientist/chemist, especially for those students who may be interested in


pursuing a career in product development or within the food manufacturing sector.
