SOTO BANJAR
(Banjar-style soup from south kalimantan)
Ingredients:
A half free range chicken;2 liters water ;3 fresh fragrant lime
leaves ;2 lemongrass,lightly crush ;1cm ginger plant,slice very
thin;2 cloves;a quarter nutmeg
Pound together to make paste:

5 red onions
3 clove of white onion
10 peppers
1cm ginger ,1cm turmeric

Complement:
75 gram soun (transparent bean flour vermicelli),softned
with hot water,and leak it
4 duck eggs
4 perkedel (potatoes crocuette of spicy ground meat)
3tablespoons fried onion
2onion leaves,slice very thin
1 tablespoon celery,slice
2calamondin ,cut in half
5lontong or ketupat

How to make :
cut free range chicken in two,boil together with
lemongrass,fresh fragrant lime leaves,ginger
plant,nutmeg as well as cloves on small fire

heat 2 tablespoons cooking oil,stir fry pasted spices


until sweet smelling and then put into chicken boiled
so then chicken softly
releasing chicken of broth,last fried till brass,after
chilled,shred of meat
serve direction: put soun in to bowl,add
perkedel,onion leaves,celery,boiled ducks
egg,,shredly chicken as well as fried onion,pour with
gravy of soup,eat with lontong or ketupat,soups chili
and calamondin
