Crowding, at the very least, will increase the amount of time it takes to cook the vegetables. But in the case of roasting, baking, or grilling, it will also keep the vegetables from browning. Microwaving, which is one of the more healthful ways to cook vegetables, is not included here because oven strength and size, and the quantity of vegetables being cooked makes it impossible to give useful cooking times. It's best to consult the manual that came with your microwave oven for details.
