Stir Fried Chicken and Broccoli

8 oz. chicken breast


2 Tbsp Shaoxing(rice) wine or medium sherry
1/2 egg white, lightly beaten with a pinch of salt, but not frothy
4 Tbsp vegetable or peanut oil
1/2 Tbsp light soy sauce
1/2 Tbsp oyster sauce
2 Tbsp enhanced chicken stock
1/2 Tbsp cornstarch
1/2 tsp rock orgranulated sugar
8 oz broccoli
2 cloves garlic, finely chopped
3 slices fresh ginger root, finely chopped
2 tsp sesame oil

Cut the chicken against the grain into thin slices about 2" long. Sprinkle with 1 Tbsp. of
Shaoxing wine.
