BADAM HALWA

Ingredients
Almonds half quantity blanched 1 1/2 cup
Milk 10 cups
Ghee 1/2 cup
Sugar 1 cup
Green cardamom powder 1/2 teaspoon
Method
Blanch half the almonds. Peel and coarsely grind with the remaining almondsHeat
milk in a deep pan and simmer till it reduces to half. Heat ghee in another pan
and sauté the ground almonds on medium heat till golden and fragrant. Add sugar an
d continue to sauté. Add green cardamom powder and mix. Add reduced milk and mix w
ell. Cook, stirring continuously, till all the liquid is absorbed and halwa cons
istency is reached. Serve warm.

CHANAR DALNA
Delicious cottage cheese and potatoes in smooth milky gravy
Preparation Time :30-40 minutes
Cooking Time :10-12 minutes

Ingredients
Cottage cheese (paneer) 250 grams
Potatoes 2 medium
Green chillies 2-3
Ginger 1 inch piece
Cumin seeds 1 1/2 teaspoons
Red chilli powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Oil to deep fry
Ghee 1 tablespoon
Garam masala powder 1 teaspoon
Sugar 1/2 teaspoon
Salt to taste
Milk 1/2 cup
Method
Cut cottage cheese into half inch sized cubes. Peel, wash and cut potato into ha
lf inch sized cubes. Remove stems, wash and slit green chilllies. Peel, wash and
roughly chop ginger. Grind one teaspoon cumin seeds, red chilli powder, turmeri
c powder, ginger with little water to a fine paste. Heat sufficient oil in a kad
ai and deep-fry the potatoes till light golden brown in color. Drain onto an abs
orbent paper and keep aside. Deep-fry paneer in the same oil and put it in warm
water. Heat ghee in a pan, add the remaining cumin seeds and when they change co
lour add the masala paste and cook for two minutes stirring it continuously. Add
the potatoes, slit green chillies, garam masala powder, sugar and salt and half
a cup of water, cover and cook for three to five minutes. Mix in milk and allow
it to simmer for another two to three minutes. Remove the paneer from the water
and add it to the potato gravy. Stir and simmer for a minute. Serve hot.
