Dragonspine Old Fashioned Apple Pie

Ingredients List

For the filling:

2 Cups Dried apples, reconstituted

1 Cup (two sticks) Butter, melted

1/4 Cup Brown Sugar, packed

1/2 Teaspoon Salt

1/2 Teaspoon Nutmeg

1 Teaspoon Cinnamon

A dash of Cardamom

For the crust:

2 1/2 Cups Flour, All-Purpose

1 Teaspoon Salt

2 Sticks Cold Butter

1/4 Cup Ice Water

Process:

For this pie, I made the filling first. I took the dried apples and reconstituted them with
hot water, letting them steep for 5 minutes. After they were tender, I drained the water and
added the butter, brown sugar, salt and spices, letting them cool before storing in the fridge. I
let the filling chill for two days because I wanted to see if the apples plumped up further before
using them (and they did).

For the piecrust, I used a recipe I found on www.instructables.com, a DIY website that I
am a member of. Making pie crust is a simple process, but one that must be done carefully, or
the crust becomes too tough. With this in mind, I combined the flour and salt together, and
then added the butter. The butter was kept in the freezer until the last minute and cut into
cubes, then combined with the flour and salt. I ran into a problem trying to do it by hand, so I
gave in and used our Kitchen Aid stand mixer. Using the paddle attachment, I continued adding
the butter until the mixture resembled coarse crumbs. Then I drizzled in the ice water until the
dough formed into a ball. I then separated the dough into two balls and let it chill overnight.
You have to work with piecrust when it is cold because if the butter melts, it makes things very
difficult to work with.

Assembling the pie couldn't have been easier. I simple rolled out the first crust, placed it
in the pie tin, added the filling, then rolled out the second crust and placed it on top, crimping
with a fork and my fingers. I cut vents to allow to steam to escape, and added the DS mountains
as a garnish. For the final touch, I brushed on a little milk and sprinkled with sugar to give it a
nice glossy finish. After baking it for 45 minutes at 350 degrees, my pie was ready.
