How to melt chocolate-

The Double Boiler Method- This is the easiest method. Put water in the
lower pan of your double boiler and bring it to a simmer. Then remove from heat.
Put chocolate into top pan and place over the bottom pan. Stir the chocolate
constantly until it is completely melted. Remove the top pan and place on a hot
pad. Now the chocolate is ready to mold.

Microwave Oven Method- This method is the fastest. Place the chocolate
into a glass bowl or large glass measuring cup. Set the microwave oven to defrost
or half power setting. Microwave the chocolate for 1 minute, then stir. Then again
for 1 minute and stir. Continue to microwave for 30 seconds intervals, stirring
after each until chocolate is melted completely.

The Slow Cooker Method- This is great for melting large amounts of
chocolate. Start by setting your slow cooker on low. Add the chocolate and stir
occasionally until melted. When the chocolate is almost melted turn off the heat
and mold your candy or leave it on low and add more chocolate.

How to make Chocolate Sculptures-


Purchase some chocolate molds to make sculptures as a beginner. Melt
semi-sweet chocolate and pour it into the molds. Refrigerate until solid, then pop
the chocolate out of the molds and your sculptures are complete.

Make chocolate "clay" by melting 10 oz. of chocolate in a microwave or


over a double boiler. Mix in 1/3 cup of light corn syrup. Pour it 1/2-inch thick onto
wax or parchment paper and refrigerate overnight. The chocolate will become
flexible enough for you to mold it by hand like clay.
